Fearne Cottons Kale, Feta & Red Pepper Pie

This pie was totally gorgeous and well worth making! I had it hot and cold by itself and will definitely be making it again! You can either make it in a big dish or smaller individual parcels! The only thing I would change is putting in a little less feta, possibly 1/3 of the recommended. Hope you enjoy making! (video below)

Ingredients
200g kale
2 tbsp olive oil
2 tbsp balsamic vinegar
4 cloves garlic
250g feta – i found this to be a little too much
Grated zest of 1 lemon
3 tbsp pine nuts
150g roasted jar red peppers
8 large sheets filo pastry
Sea salt & pepper
