These cookies are seriously amazing and so gooey!!! Cookies are one of my favourite sweet treats and these did not last long in my household!
225g unsalted butter
350g soft light brown sugar
1/2 teaspoon vanilla extract
400g plain flour
2 1/2 teaspoons bicarbonate soda
225g dark chocolate – if you’re not keen just use milk chocolate or one of your choice
white chocolate chips – optional
Preheat the oven to 170c (325F) Gas 3
*Put the butter and sugar in a bowl and mix until combined
*Add two eggs and vanilla extract
*Add the flour and bicarbonate of soda and mix until all of the mixture forms a dough
*Break up the chocolate into pieces – i like them quite chunky and I also added in some white chocolate chips!
*Cover trays with grease proof paper
*Take a handful of dough and roll into a ball, flattern a little with your hands then place on the tray
*Cook for 10 minutes or until golden brown
*Serve and enjoy!
