I absolutely love popcorn as a healthy snack and this recipe couldn’t be more simple!!
1/2 cup popcorn kernels
2 Medjool dates
1 tablespoon almonds
1 tablespoon water
2 1/2 tablespoon coconut oil
2 teaspoons vanilla essence
In a food processor/blender/nutribullet combine the coconut oil, dates (remove the stones and chop), almonds, vanilla essence and water. Blend for about 20-30 seconds until a smooth paste is formed, add more water if necessary and leave to one side.
Add half a table spoon of coconut oil to a warm pan and melt. To test if the oil is hot enough for your popcorn add three popcorn kernels and pop the lid on. Once all three kernels have popped remove and add 1/2 cup of popcorn kernels to your pan and close the lid.
Once nearly all of your popcorn kernels have popped remove from the heat and pour in to a bowl.
Add your blended mixture to the popcorn and gently stir or use your hands if you like to get messy!! Once all of the popcorn has been coated set your oven to gas mark 150c.
Pour your coated popcorn on to a tray which has been lined with baking paper and spread evenly with a spoon.
Place in the oven for 10 minutes and stir after 5.
After 10 minutes remove your popcorn from the oven and tip on to kitchen paper and leave to cool.
Once cooled serve and enjoy!!!!
